| Delish organic, gluten free, dairy free, soy free Paleo Pumpkin Waffles. Great on a cold fall day. |
Ingredients:
- 8 organic brown eggs; whisked
- 2 cups organic unsweetened coconut milk
- 3 TBS pure vanilla extract
- 3/4 cup organic real maple syrup
- 1 15 oz can organic pumpkin
- 1/2 cup organic unsweetened shredded coconut
- 1-1/2 cups ground psyllium husks (I use Trader Joes brand)
- 3 cups organic almond flour
- 1 tsp baking soda
- 1 tsp aluminum free baking powder
- 1 tsp real salt (or sea salt of your choice)
- 1 TBS organic ceylon cinnamon
- 1 tsp organic nutmeg
- 1tsp organic clove
- 1tsp organic ginger
Directions:
- Turn on your electric waffle maker.
- In your electric mixer bowl mix together eggs, coconut milk, vanilla, maple syrup and pumpkin; blend well.
- In a separate bowl add almond flour, shredded coconut baking soda, baking powder, salt, spices & psyllium powder. Using a wire whisk, mix together until well combined.
- Add dry ingredients to your wet ingredients, and mix well with your mixer on speed 3. Your batter will be thick and continue to thicken up from the psyllium.
- Spray the insides of your waffles maker with organic coconut oil spray.
- When your waffle maker is preheated add 1/2 cup of batter to the wafflemaker, close & time for approx 6 minutes. Remove to a plate, top with maple syrup (I dip mine in syrup in a ramekin), coconut whipped topping, jam or whatever you like to top them with, and gobble them down!

Notes:
I have a Waring double waffle maker that makes large Belgian style
waffles. The light comes on when it's ready to add batter and it beeps
and the light comes on again when the waffles are done. I love my waffle
maker! It's a staple in our home, my husband's fav. This recipe makes 8 large Belgian style waffles. I make them and freeze them and eat them on Sundays with our Sunday brunch. You can thaw & place directly on the oven rack on 350 degrees for 10 minutes.
