Ingredients:
- 6 large potatoes
- 8 hard boiled eggs
- 1 TBS onion powder
- 2 tsp garlic salt
- ½ cup of dill pickle juice (or more depending on thickness of sauce)
- 2 cups of mayonnaise
- 1/4 cup of yellow mustard (you may need a little more depending on your tastebuds)
- 3 cups of mashed potatoes
- 1 jar of dill pickles relish
- 1 TBS dill weed
Directions:
- Cut up potatoes, leaving skin on if you like.
- Boil until soft, drain, cool and set aside (do not overcook).
- Boil eggs, cool, peel, chop & set aside.
- In large mixing bowl remaining ingredients; mix well until creamy sauce.
- Add eggs to sauce, mix & pour over cooled potatoes; mix well.
- Chill for 4-6 hours & serve.
Serve With: BBQ's Meats, great summer side dish!
