Potato Salad


Ingredients:
  • 6 large potatoes
  • 8 hard boiled eggs
  • 1 TBS onion powder
  • 2 tsp garlic salt
  • ½ cup of dill pickle juice  (or more depending on thickness of sauce)
  • 2 cups of mayonnaise
  • 1/4 cup of yellow mustard (you may need a little more depending on your tastebuds)
  • 3 cups of mashed potatoes
  • 1 jar of dill pickles relish
  • 1 TBS dill weed
Directions:
  • Cut up potatoes, leaving skin on if you like.
  • Boil until soft, drain, cool and set aside (do not overcook).
  • Boil eggs, cool, peel, chop & set aside.
  • In large mixing bowl remaining ingredients; mix well until creamy sauce.
  • Add eggs to sauce, mix & pour over cooled potatoes; mix well.
  • Chill for 4-6 hours & serve.

Serve With: BBQ's Meats, great summer side dish!
