Ingredients:
- 1½ cup of hard red spring whole wheat flour (freshly ground if possible)
- ½ cup of cold pressed flax
- 1 tsp of soda
- ½ tsp of salt
- 2 Sticks of butter; softened
- ½ cup of sugar
- 1 cup of packed brown sugar
- 2 eggs
- 1 TBS of vanilla
- 1 TBS of cinnamon
- 1 tsp nutmeg
- 3 cups of dry oatmeal-(quick cooking or regular)
- 1 cup of raisins-this is optional
Directions:
- Preheat oven.
- Combine flour, oatmeal, cinnamon, nutmeg, flax salt & soda in a medium bowl; set aside.
- In a large mixing bowl cream together butter, sugar, brown sugar, egg, and vanilla.
- Combine with dry ingredients, mix well & add raisins.
- Drop by spoonful on ungreased cookie sheet about 2 inches apart (I line mine with parchment paper); bake.
- The cookies will be light and golden color when they are done.

Temp: 350°F
Cook Time: 10-14 Minutes
Serve With: Milk, Coffee or tea
Notes: I usually don't care for Oatmeal Cookies; however this has become one of my favorite cookies. Plus it is
high in fiber and vitamins/minerals & healthy for you.
Yields: 24 Cookies
