Power Bites-Gluten, Soy & Dairy Free

Drink a glass of water or green tea while consuming these to get the full benefits of the psyllium fiber.

Ingredients:
  • 1/2 cup organic dried goji berries
  • 3/4 cup organic dried blueberries
  • 3/4 cup organic dried cranberries
  •  1 cup shredded unsweetened organic coconut
  • 3/4 cup raw local honey
  • 12 oz jar almond butter
  • 2/3 cup ground psyllium (I like the trader joes brand)
  • 1/2 cup organic chai seeds
  • 1 1/4 cups organic raw pumpkin seeds
  •  2 heaping scoops of bone broth protein powder
  • 3 TBS organic Nutvia extra virgin coconut oil

I use this brand of Bone Broth recommended by Dr Axe. I found it cheapest on Amazon.

Directions:
Add ingredients above to a large mixer (I use the 8Q Professional Kitchen Aid with my Paddle).
Mix together well on speed 3, scraping sides frequently. Rolls into small balls and store in the refrigerator for up to two weeks. 

Notes:
 These bites are gluten, soy & dairy free. I pack these in my husband's lunch for his afternoon snack. Consume 10-12 ounce beverage with these because of the psyllium fiber. They are full of protein and pack a powerful punch of nutrients, hence the name Power Bites (see below for why I chose these ingredients when I concocted this recipe).
