Organic Sweet Cornbread-Gluten Free


Organic Sweet Cornbread-Hot out of the oven
Ingredients:
  • 1 cup of organic yellow corn meal
  • 3 cups of organic gluten free flour
  • 2 TBS of aluminum free baking powder
  • 1 tsp of sea salt
  • 1 cups of  organic sugar
  • 4 organic brown eggs
  • cup of avacado oil
  • 6 TBS of melted earth balance soy free gluten free dairy free margarine
  • 2½ cups of organic unsweetened coconut milk
Directions:
  • Preheat oven. Grease 9X13-inch pan.
  • Combine cornmeal, flour, baking powder & salt.
  • In separate mixing bowl combine sugar, eggs, oil, butter & buttermilk; add dry ingredients.
  • Mix together & pour batter into prepared pan, bake.
Fluffy and delish!
Cook Temp: 350°F 
Cook Time: Bake 35-45 minutes or until light golden brown and toothpick comes out clean when inserted in center. 
Serve With: Chili, stew, slumguli, chowder, salad, etc. Top with honey butter.
Notes: A family favorite. Gluten Free, Dairy Free & Soy Free.
Yields: 12 Servings

Honey Spread:
  • 1 stick of softened earth balance margarine mixed with ½ cup of honey
