| Organic Sweet Cornbread-Hot out of the oven |
- 1 cup of organic yellow corn meal
- 3 cups of organic gluten free flour
- 2 TBS of aluminum free baking powder
- 1 tsp of sea salt
- 1⅓ cups of organic sugar
- 4 organic brown eggs
- ⅔ cup of avacado oil
- 6 TBS of melted earth balance soy free gluten free dairy free margarine
- 2½ cups of organic unsweetened coconut milk
Directions:
- Preheat oven. Grease 9X13-inch pan.
- Combine cornmeal, flour, baking powder & salt.
- In separate mixing bowl combine sugar, eggs, oil, butter & buttermilk; add dry ingredients.
- Mix together & pour batter into prepared pan, bake.
Cook Time: Bake 35-45 minutes or until light golden brown and toothpick comes out clean when inserted in center.
Serve With: Chili, stew, slumguli, chowder, salad, etc. Top with honey butter.
Notes: A family favorite. Gluten Free, Dairy Free & Soy Free.
Yields: 12 Servings
Honey Spread:
- 1 stick of softened earth balance margarine mixed with ½ cup of honey
