| Fudge for my sweetie. Love that man! | 
 Ingredients:
- 4½ cups sugar
 - 13 oz coconut creamer
 - 36 oz (3-1/2 bags) semi-sweet enjoy life semi-sweet chocolate chunks
 - 2- 7 oz jar marshmallow cream
 - 1 cup organic coconut oil (the solid type)
 - 1 tsp. vanilla
 - 2 cups chopped pecans-optional
 
- Mix together in a large bowl; jar marshmallow cream, melted coconut oil.
 - Cream the coconut oil and marshmallow together and add chocolate chunks; mix well.
 - In saucepan mix sugar with coconut creamer.
 - Boil 7 to 8 minutes, stirring constantly (rolling boil) over medium heat.
 - Pour hot mixture over chocolate mixture; mix well.
 - After chocolate has melted, add 2 cups of nuts and 1 tsp. of vanilla, mix well.
 - Pour into large pan lined with wax paper and chill in refrigerator.
 - Cut into squares after it has hardened in frig; serve.
 
Notes: I make this on during the Holidays. Everyone in our family loves it, no one can tell it's gluten, soy & dairy free. This freezes well.
Yields: 5 lbs of fudge
