| Gluten Free Soy Free Dairy Free Peanut Butter Cookies |
Ingredients:
- 2 Large Brown Free Range Eggs
- 1-1/2 cup Organic Sugar
- 2 cups of Earth Balance Creamy Peanut Butter
- 2 tsp Baking Soda
- 2 tsp GF Pure Vanilla Extract
- 2/3 cup Enjoy Life Soy Free Mini-Chocolate Chips (optional)
- Preheat oven.
- Beat together egg, sugar, baking soda and vanilla in a standing mixer with paddle attachment, or with handheld mixer.
- Beat in Peanut Butter.
- Stir in chocolate chips if using.
- Roll into 2" balls and gentle flatten in a criss-cross pattern with the back of a fork.
- Place on cookie sheet lined with parchment paper, sprinkle with coarse ground sugar; bake.
- Remove from oven, leave on cookie sheet for an additional 5 minutes.
- Transfer cookies to rack.
- Cool completely before storing.
Cook Temp: 350°F
Cook Time: 10 Minutes
