Peanut Butter Cookies-GF/SF/DF

Gluten Free Soy Free Dairy Free Peanut Butter Cookies

 Ingredients:
  • 2 Large Brown Free Range Eggs
  • 1-1/2 cup Organic Sugar
  • 2 cups of Earth Balance Creamy Peanut Butter
  • 2 tsp Baking Soda
  • 2 tsp GF Pure Vanilla Extract
  • 2/3 cup Enjoy Life Soy Free Mini-Chocolate Chips (optional)

On parchment paper ready for the oven

Sprinkle with coarse ground sugar & bake


Directions:

  • Preheat oven.
  • Beat together egg, sugar, baking soda and vanilla in a standing mixer with paddle attachment, or with handheld mixer.
  • Beat in Peanut Butter.
  • Stir in chocolate chips if using.
  • Roll into 2" balls and gentle flatten in a criss-cross pattern with the back of a fork.
  • Place on cookie sheet lined with parchment paper, sprinkle with coarse ground sugar; bake.
  • Remove from oven, leave on cookie sheet for an additional 5 minutes.
  • Transfer cookies to rack.
  • Cool completely before storing.

 
Cook Temp: 350°F
Cook Time: 10 Minutes
Serve With: Gluten, Dairy & Soy Free Vanilla Ice Cream
