Buttermilk Banana Bread

My family loved it!
Ingredients:
  • 1/2 cup of butter; softened
  • 1-1/4 cups of sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 1-1/2 cups of Mashed Bananas (Puree in the blender)
  • 1/2 cup buttermilk
  • 2½ cups of Flour
  • 1 tsp Baking Soda
  • 1 tsp salt
 Directions:
  • Grease 9X5 glass pan with butter; set aside.
  • Beat eggs for 1 minute on 4 speed in your mixer.
  • Add to mixing bowl cream together eggs, sugar, & butter.
  • Add buttermilk, bananas & vanilla; blend well in mixer.
  • In separate bowl combine dry ingredients.
  • Add dry to wet ingredients; mix well for approx 4 minutes on speed 4 in your mixing bowl.
  • Pour into prepared pan; bake.
  • You can add the batter to greased muffins pans if you want muffins. Bake temp is same reduce baking time to 35-45 minutes.
Cook Temp: 350°F
Cook Time: 1 hour or until toothpick comes out clean. Invert pan on cooling racks. Cool thoroughly approx. 2 hours before cutting.
Serve With: Coffee or tea.
Notes: A family favorite.
Yields: 1 Loaves
